About Atlantic Halibut

Nova Scotia Atlantic halibut are harvested from the cold, clean, pristine waters along the coast of the province and shipped all over the world. Halibut is one of the largest flatfishes in the world. Halibut are flat and diamond-shaped with a white underbelly and both eyes on its upper side. They have a firm, white, lean flesh and a mild sweet flavour and texture.

Nova Scotia tuna are harvested from the cold, clean, pristine waters along the coast of the province and shipped all over the world. Tuna are a sleek, powerful, and large pelagic fish. Species of tuna fished in Nova Scotia include Bluefin, Yellowfin, Bigeye and Albacore.

About Sea Scallop

ABOUT SEA SCALLOP
Prized for its large, delicious, succulent meat, Nova Scotia scallops are harvested from the cold, clean, pristine waters of the Atlantic Ocean, found densely concentrated on the sandy gravel bottoms of the sea. Also referred to as Giant Scallops, sea scallops are bivalve molluscs and are one of Nova Scotia’s most important commercial shellfish species. Sea scallops are possibly best known for its beautiful and distinctive circular-shaped shell that can reach up to 20 cm in size.

Nova Scotia’s scallop fishery is carefully managed to bring the highest quality scallop product to market year-round. Most offshore catches in Nova Scotia are shucked at sea, frozen at sea or placed in wet storage. The process of shucking consists of using a knife to pry open the shell of the scallop and remove the meat muscle. Nova Scotia’s scallop processing facilities are registered to meet international quality assurance standards, ensuring you receive a healthy, safe, and high-quality product.

About Atlantic Pollock
POLLACHIUS VIRENS
Atlantic pollock are harvested from the cold, clean and pristine waters along the coast of the province and shipped all over the world. Atlantic pollock are related to cod and haddock and can be identified by a small barbell that extends from the chin of the fish to its whiskers. A deep-sea fish, pollock have a brownish-green back that fades to yellow-grey and then silver-grey on its belly and an elongated body with three dorsal fins. Considered a strongly flavoured whitefish, it is commonly used to make fish and chips and imitation crab.
